Rancilio Silvia Shot Walkthrough

Video showing how to brew a shot on the Rancilio Silvia, including tips on how to "temperature surf" the machine by getting the boiler to cycle to it's top temperature (about 101C with a "float"), then running a bit of water to flush out the excess heat. Shots pulled are "traditional doubles", pulling 60mls in 28 seconds, using Kid-O from Intelligentsia (I called it Black Cat by mistake once in the vid). Dose is about 17g in a Synesso 14g basket. Grinder used is the Anfim "Best" home grinder, about $420Cdn / $300 US. PS - because of the white balance (shot under old florescent lights), the shots look blonder in the vid than they are. I'd say the colour in person was a mediumbrown / hazelnut tiger flecks. No blond dotting.

Sixteen ounces of milk will need three ounces of caramel. Mazzer Mini and Sunbeam EM6910

I knock up a flat white with my new Mazzer Mini and old Sunbeam EM6910. This is the second coffee I've made with the new grinder (and consumed). About the fifth shot I've pulled. The grind was just about spot on from the factory for the beans I was using (five senses Ethiopian Harrar). The extraction was pretty good, the milk had terrible texturing, I need to upgrade to a machine that can actually steam milk properly. One day. I'm experimenting with the Mazzer with no hopper. As you can see, I've worked out how much coffee to scoop in and grind, hopperless style. I'm entertaining this weekend so will throw the hopper back on for that. As you can see, it takes a while to clean the doser chamber. I've since whipped out the mini-dyson and just vac'd up the doser chamber, it's faster. I've also since learned that If I let the grinder completely grind, and THEN start using the doser, there is no need to distribute grinds by rotating the PF in the mazzer PF holder. I can just 'clack clack clack' and it's full and even. A long way to go with this new grinder. Very happy so far. A lovely step up from the Sunbeam EM0480

Cleaning the inside of your Atomic Coffee Machine - Part 2

Atomic Coffee Machines are made from aluminium and you should NEVER leave water inside the machine for long periods. At best you will fill the machine with aluminium oxide and at worst the steam knob will meld to the body. You can use lemon juice to clean the inside of your Atomic Coffee machine. Preparing delicious Vietnamese coffee is quick, easy and doesn't require much clean-up afterward. The coffee filter is stainless steel and there are three parts (filter, screw-on damper, and lid). Simply place the filter on top of a cup, so it looks like a hat. Add 2-3 teaspoons of coffee to the filter, then screw on the damper so it's snug (not tight). Shake the filter a bit to settle the coffee. Fill up the cup about 1/3 with hot water then wait 20 seconds. Unscrew the damper 2 turns and fill the cup entirely with hot water. Place the lid on and wait a few minutes until the water has dripped though. Add a spoonful (or more) of sweetened condensed milk to the cup before or after you start the process. The final result is fabulous. Printed instructions come with the filter. The filter set is made in Taiwan of stainless steel, and quality is excellent--it will last for years. We offer Vietnamese coffee as well.

As beautiful as sculpture, as fascinating as chemistry, and as entertaining as theater, this coffeemaker from Switzerland converts the ordinary process of brewing coffee into an artful performance. And it makes six 5-ounce cups of full-flavored coffee while it entrances. The coffee plunger is made of high-grade 18/8 stainless steel. The case and the cover are made according to double wall technology. They have double sides, and the space between the two is filled with air. This technology enables us to keep the temperature of a drink at a constant for a long period of time, and at the same time, makes the outer sides of the coffee plunger safe to touch. There is a filter press inside, which when pushed down, prevents coffee grounds from floating in order to offer the coffee the best color and flavor. The parts of the coffee plunger can be removed for sanitary cleaning purposes. Stainless steel has low thermal conductivity, which adds to its usability. Coffee stays in the plunger for longer periods of time, while the plunger manages to maintain the vitamins and aroma in every beverage.
